Katei Omakase is an intimate, 20-course tasting experience tucked inside Polanco, the upscale coastal Mexican restaurant downtown, with both concepts owned by Dallas-based Azteca Concepts. Only 10 diners are seated per service across two nightly seatings, Tuesday through Saturday, with guests first welcomed in a private lounge for a drink and canapés before chefs learn each table's preferences and lead them to the sushi counter. Executive Chef Cris Marino, a Colombia native trained in Japanese technique, builds a rotating progression around premium imported fish alongside Texas and Mexican ingredients, like scallops with grilled nopales and achiote oil. It's one of the newest and most exclusive dining formats Fort Worth has, designed as much around interaction and presentation as the food itself. Best for a special-occasion omakase dinner downtown that doubles as an event.
